Located in a picturesque valley in the northern part of the Chalonnaise coast, just a short 20-minute drive south of Beaune, lies the magnificent Château de Chamilly. The story of Château de Chamilly begins with Noël Bouton, a distinguished figure who served as the Lieutenant General of Louis XIV’s armies, Governor of Strasbourg, and Marquis de Chamilly. In the 17th century, Bouton constructed the château on the foundations of a fortified farm from the 14th century, creating a grand residence that would stand the test of time.

In the early 19th century, the Desfontaine family acquired the estate and the surrounding lands, becoming custodians of its legacy. However, it wasn’t until 1970 that a remarkable transformation occurred. Louis Desfontaine, a true connoisseur of vines and a passionate advocate of winemaking, made the bold decision to abandon cereal crops and livestock in favor of dedicating himself fully to the vineyards. In 1981, Louis married Véronique, and together they ushered in a new era for the estate, propelling it to prominence in the esteemed Côte Chalonnaise region.
When Louis unexpectedly passed away in 1999, Véronique gracefully assumed the role of steward, expertly managing the estate until the return of her two sons, Xavier and Arnaud, in 2007. This triumvirate of talent, with Véronique at the helm, has been the driving force behind the ongoing success and development of Château de Chamilly.

At Château de Chamilly, the vineyards are treated with utmost care and attention, with each vine regarded as a unique entity from the moment of pruning to the bountiful harvest. The concept of “Climat,” an expression of a vineyard’s specific terroir, holds great significance here. Every Climat is vinified, aged, and bottled separately, allowing the distinct character of each plot to shine through. You’ll find the names of these revered Climats proudly displayed on the bottles, a testament to the estate’s commitment to showcasing the individuality of its wines.
A hallmark of Château de Chamilly is its unwavering pursuit of excellence. Following a manual harvest, the grapes undergo a rigorous selection process to ensure that only the finest specimens are used in winemaking. With a focus on red wines, which undergo an extended aging process of 18 months, including 12 months in French oak barrels and an additional 6 months in bulk before bottling, each wine is granted the time it needs to mature and develop its full potential. The proportion of new barrels used varies depending on the richness of the wine, allowing the distinctive character of each vintage to be fully expressed.
