Silverthorn

Bonnievale, South Africa

Silverthorn Wines is among only a handful of producers who have dedicated their expertise solely to the production of this elegant style of wine. They are a proud member of the Cap Classique Association and a member of the prestigious Cape Winemakers Guild. Silverthorn’s terroir, with its rocky, lime-rich, shale soils similar to the famous Champagne soils in France coupled with our mature Chardonnay vineyards ensure Silverthorn’s entry into the world of sparkling wine.

Silverthorn Wines produces an exciting range of top end, Méthode Cap Classique (MCC) wines, which have undergone a natural, secondary fermentation in the bottle.

Silverthorn has become synonymous with their ethos of Afropean synergy, combining old world European heritage and knowledge; and their contemporary African environment and culture. The story-telling and imagery, with each product they have released, has become an important Silverthorn feature.

The Genie

The Genie was hand harvested in mid February in the early hours of the morning at 19 degrees balling. The colour gradually evolves into a salmon pink…

The Big Dog

Both the Chardonnay and the Pinot Noir were picked by hand and then gently whole bunch pressed. The Pinot Noir was tank fermented in order…

The Green Man

The Green Man was hand harvested in end-January 2020 in the early hours of the morning at 19 degrees balling. The grapes were whole bunch pressed with a very low recovery rate of only 500 litres per ton – this ensures that no bitter tannins are extracted. Fermentation took place in a stainless steel tank at 15 degrees Celsius and 40% was barrel…

The Jewel Box

Jewel Box is a wine with emphasis on richness, opulence and complexity. The inspiration for this style comes from John’s all-time favourite Champagnes namely, Krug and Bollinger. The grapes were hand harvested towards the end of January 2018 and gently whole-bunch pressed to recover a maximum of only 550 litres per ton. Fermentation of the Chardonnay was split between …

The River Dragon

River Dragon was hand harvested towards the end of February in the early hours of the morning at 19 degrees balling. The grapes from a 39 year old vineyard, were whole bunch pressed with a very low recovery rate of only 500 litres per ton – this ensures that no bitter tannins are extracted. 40% of the base wine was fermented in old Acacia 500 litre barrels to enhance complexity…
