Today, Maison Collery remains true to its historical roots in Aÿ, leveraging the renowned Pinot Noir grapes from the Champenois Grands Crus that have been instrumental in its success. Aÿ’s terroir, encompassing a hillside on the Reims mountain spread over 360 hectares, predominantly consists of Pinot Noir vines.
