Can Axartell, located in the northeast of Mallorca near the city and port of Pollença, stands as a progressive and historically rich winegrowing estate. With roots dating back almost 800 years, the estate has witnessed the ebb and flow of viticulture in the region, constantly adapting to the changing times. Can Axartell is not only a testament to the island’s winemaking traditions but also a symbol of harmony with the landscape, culture, and ecological values of Mallorca.

Founded shortly after the Christian reconquest of Mallorca in 1229, Can Axartell has a deep-rooted history in viticulture. While the earliest vineyards on the estate may not have been used for winemaking due to religious restrictions, the site gained prominence in the 16th and 17th centuries when its wines were served to distinguished guests in the city of Pollença. The estate’s olive oil was equally renowned, and to this day, Can Axartell maintains over 40 hectares of olive trees, some of which have stood since its very inception.

When Hans-Peter Schwarzkopf, originally from Hamburg, and his family discovered the estate, they were captivated by its historic charm and the potential for restoration. The estate had fallen into disrepair, but Schwarzkopf envisioned a long-term project that would revive the property while honoring its heritage. With patience and dedication, Can Axartell began its transformation into a unique estate that seamlessly blends into the island’s landscape and traditions.

In 1999, even before the first vineyards were fully established, Can Axartell applied for organic certification, reflecting a commitment to sustainable practices. Today, the estate boasts 34 hectares of vineyards on the estate itself, with an additional 24 hectares in the interior of Mallorca near Villafranca de Bonany.

The vineyards feature both indigenous and international grape varieties, with a growing awareness of Mallorca’s rich selection of native grapes. Red varieties such as Callet and Manto Negro take center stage, alongside Premsal, the most commonly cultivated white variety. Can Axartell also explores lesser-known indigenous grapes like Giró Ros, Giró Negre, Fogoneu, Gorgolassa, and even a grape variety called Pollença. In collaboration with the University of the Balearic Islands, Can Axartell nurtures and studies these unique grape varieties, preserving the island’s viticultural diversity.

As the vineyards expanded, plans for the winery took shape. A gravity-based winemaking system called Mètode Gravetat became the guiding principle. The solution was to build the winery within the estate’s abandoned quarry, which not only allowed for the implementation of the gravity-based system but also restored the hillside landscape. The winery’s four-story building provides ideal temperature conditions for winemaking and storage, maintaining a cool climate without the need for excessive energy consumption. The design harmoniously integrates with the surrounding environment, showcasing the estate’s commitment to ecological and sustainable practices.
