In 2002, a remarkable journey began with the establishment of Bodegas Tábula, led by a group of partners and helmed by Jose Luis Muñoz, a visionary businessman from Valladolid with deep roots in the agri-food sector. Meanwhile, the DAMANA Crianza transitions to wooden tanks, free from the constraints of the fermentation process, while the DAMANA 5 continues its second fermentation in stainless steel tanks.

Each wine is carefully nurtured in barrels for an appropriate duration, ranging from 5 to 16 months, before additional aging in foudres and wooden deposits for a further 6 to 12 months, depending on the wine type, vintage, and grape composition. Finally, the wines rest in bottles, undergoing refinement for at least the same duration as they spent in the barrels.
