In 2002, a remarkable journey began with the establishment of Bodegas Tábula, led by a group of partners and helmed by Jose Luis Muñoz, a visionary businessman from Valladolid with deep roots in the agri-food sector. Right from the outset, Muñoz took charge of the project, driven by a deep understanding of the significance of terroir and an unwavering commitment to respecting the fruit and capturing the essence of their vineyards. Situated in the heart of the renowned Ribera del Duero wine region, Bodegas Tábula boasts a privileged location for its vineyards. This, coupled with their limited production approach and meticulous artisanal processes, gives rise to wines that are truly unique and unmistakable in character.

The winemaking journey at Bodegas Tábula commences right in the vineyards. The terroir, encompassing soil, climate, and geography, plays a pivotal role in the development of their wines. Each grape variety is meticulously tended to, with careful consideration given to the influence of the surrounding environment. It is here, amidst the vines, that the wines of Bodegas Tábula come to life.

Harvesting at Bodegas Tábula is a labor-intensive affair carried out entirely by hand. Grapes are delicately picked and placed in small boxes weighing 15 kilograms, allowing for precise selection and comprehensive quality control. Within the cellar, two selection tables further ensure that only the finest bunches are chosen, and each grape undergoes rigorous scrutiny. The destemmer separates the grapes from the stems, marking another step in the meticulous process.

Following this rigorous selection, the grapes make their way to the winery, where they undergo a brief preferential maceration tailored to the specific wine being crafted. This artisanal technique imparts a distinct character to the wines, rendering them truly one-of-a-kind. The DAMANA range of wines, in particular, undergoes this process in stainless steel tanks of varying capacities, adding further depth and complexity to the final product.

Once the alcoholic fermentation concludes, the Tábula wines embark on another transformative phase—the malolactic fermentation. This crucial step takes place in barrels, further enhancing the wines’ flavors and texture. Meanwhile, the DAMANA Crianza transitions to wooden tanks, free from the constraints of the fermentation process, while the DAMANA 5 continues its second fermentation in stainless steel tanks.

The aging process at Bodegas Tábula is a meticulous art. Each wine is carefully nurtured in barrels for an appropriate duration, ranging from 5 to 16 months, before additional aging in foudres and wooden deposits for a further 6 to 12 months, depending on the wine type, vintage, and grape composition. Finally, the wines rest in bottles, undergoing refinement for at least the same duration as they spent in the barrels.

In the end, it is the culmination of various factors that makes Bodegas Tábula wines truly exceptional. The vineyards’ privileged location in the heart of Ribera del Duero, coupled with the limited production philosophy, along with the painstaking processes of harvesting, selection, and artisanal craftsmanship, ensures that each wine produced is a testament to the utmost dedication and unwavering pursuit of excellence.
