The 13 contracted farmers primarily cultivate grape varieties unique to Yamanashi, such as Koshu, Delaware, and Muscat Bailey A. On the other hand, the young vineyard at 7c Winery is intentionally dedicated to cultivating Western varieties including: Merlot, Pinot Noir, Petit Verdot, Cabernet Franc, Petit Manseng, etc.. The winery employs small-batch fermentation to capture the individuality of each grower’s craft.
